Abstract:
To produce colorless or nearly colorless alcoholic beverage without causing Maillard reaction.
This method for producing an alcoholic beverage comprises mixing a saccharide material containing fermentable carbohydrate with a proteolytic product to prepare colorless or nearly colorless fermentation stock solution and adding a yeast to the fermentation stock solution to ferment the stock solution so as not to heat the fermentation stock solution in or after preparation thereof.
