Abstract:
To provide a production method of a new bean protein product.SOLUTION: A bean protein product having a content of protein more than about 50 wt.%(N×6.25)d.b. is collected in a process of a bean protein source material for forming a bean protein product to extract a bean protein source using a calcium salt solution. Acquired bean protein product solution is separated from most part of a residual bean protein source, next the bean protein solution is processed and finer residual solid is extracted, optionally cleansed, dried and the bean protein product is provided. Or the bean protein source is extracted in water, most part of the residual protein source is removed, acquired protein solution is processed in a calcium salt and a phytic acid is precipitated. The precipitated phytic acid and the finer residual solid remained in the solution in the first separation step are taken out from the bean protein solution and the bean protein product is provided.SELECTED DRAWING: None
