PURPOSE: To provide a method for obtaining a bite-sized Chinese dumpling stuffed with minced pork (giaoz) by picking up the periphery of the crust at several positions and collecting and adhering them while the amounts of the ingredients to be stuffed are secured in a crust, and the device for production of the same.

CONSTITUTION: A crust 61 for the Chinese dumpling having several depressions arranged symmetrically on its periphery is used and the crust 61 having the ingredients on its surface is placed between a plurality of gripping nails, and the nails are allowed to approach toward the center of the crust 61 to pick up its periphery and adhere the peripheries to each other. The device is provided with a plurality of grooves on the upper surface of a plate supporting the crust 61 of the dumpling so that the grooves cross each other and three pairs of gripping nails are projected from the bottom surface by penetrating through the grooves and these gripping nails are supported by a pin to an upper surface plate and a nail-driving mechanisms is set below the pin supporting the gripping nails.
