Abstract:

PURPOSE: To obtain a bread by cutting a bread with hollow space therein into about halves and packing said hollow space with vegetables, meat-processed product and chili sauce to effect no protrusion of said vegetables and meat- processed product and no spilling of the chili sauce out.

CONSTITUTION: A bread with hollow space is prepared by mixing (A) 51.5wt.% of high-grade wheat flour, (B) 9.0wt.% of low-grade wheat flour, (C) 0.9wt.% of yeast, (D) 0.9wt.% of salt, (E) 0.1wt.% of bigorre, (F) 36.0wt.% of water, and (G) 1.6wt.% of wholly granular powder followed by baking the resultant mixture in an oven at high temperatures. The bread thus produced is cut into about halves, and one of the halved hollow space is packed with vegetables, meat-processed product, etc., and a sufficient amount of chili sauce, thus obtaining the objective bread.
