Abstract:

To provide a compound food containing whole grain, which is stable in storage.

This storage stable compound food containing whole grain, such as bitter or sweet snacks and cereals, is continuously produced, as gelatinized whole grain cereal grains are provided, by cooking whole-grain cereal grains in the existence of water effective to gelatinize starch of whole grain cereal grains, and preparing dough including mixing a small amount of dough ingredient such as starch, whole-grain flour, an optional expanding agent, and food ingredient selected from the group consisting of vegetables and fruits and effective to adjust dough, with the gelatinized whole grain cereal grains. The whole grain-containing compound food as excellent dietary fiber source, having nutritive value and low fat and is given with a plurality of flavors is provided by forming the dough in an individual dough unit followed by baking or deep-frying.
