Abstract:

PURPOSE: To obtain cooked cereals, capable of readily producing cereal grain- containing breads excellent in taste and flavor by their use in producing the breads and having keeping quality for a long period by hot-pressing cereal flakes and water in a hermetically sealed system.
CONSTITUTION: Cereal flakes (preferably dried flakes with ≤15% moisture content) and water are subjected to hot-pressing treatment at 110-130°C preferably under 1.3-2kg/cm2 pressure for ≥20min in a hermetically sealed system to afford cooked cereals. Furthermore, at least one of fats and oils and emulsifying agents can preferably be added in producing the cooked cereals to prevent stickiness, etc., of the cooked cereals. Palm oil is preferred as the fats and oils. A monoglyceride of a fatty acid is preferred as the emulsifying agents.
