Abstract:

PURPOSE: To produce a dried bottle gourd food, having high nutritive value, good in keeping quality and food sanitation properties, excellent in palatability and edible in a large amount with no feeling of satiety.
CONSTITUTION: The objective method for producing a dried bottle gourd food is characterized by mixing a fruit of the bottle gourd pulverized into a slurry form with a humectant ingredient in an amount of 0.5-10.0 based on the solid content of the fruit of the bottle gourd and drying the resultant mixture to ≤35% moisture content by a drum drying method.
