Abstract:
PURPOSE:To obtain the titled product such as salted and dried fish, dried small sardines or dried MIRIN (sweet SAKE)-seasoned sardines having durability, excellent taste, not solidifying meat even by leaving for a long time after grilling, by immersing fishes and shellfishes in a pretreating solution containing an extracted solution of Chlorella with hot water, washing with water and drying in the sun. CONSTITUTION:A seasoning solution containing or not containing a solution of salt is blended with 2-6% extracted solution of Chlorella with hot water to give a pretreating solution. Then fishes and shellfishes (e.g. opened horse mackerel or spotlined sardine) are immersed in the pretreating solution for given time, washed with water and dried in the sun.
