To provide a method for producing fish gelatin to be used as a useful food raw material by extracting colorless, non-smelling and defatted fish gelatin from raw materials comprising fish skins and fish bones.
This method for producing fish gelatin comprises (a protease- treating process) for removing scales, fats and left flesh from the fish skins and fish bones as raw materials, (an ethanol-defatting process) for removing the fats from the raw materials treated with the protease, an extraction process for extracting the fish gelatin from the defatted raw materials, (a lipase-treating process) for separating the fats from the extracted fish gelatin, (a treating process) for the fat removal, decoloration and deodorization of the lipase-treated fish gelatin, and a process for drying the treated fish gelatin.
