Abstract:

PURPOSE: To obtain the titled 'MISO' capable of clearly discriminating rice grains when filled in a transparent bag and floating the rice grains on the liquid surface when prepared into MISO soup, by charging rice KOJI (yeast) made from polished and pregelatinized rice grains as a raw material together with boiled or steamed soybeans and common salt, fermenting the aging the resultant blend.

CONSTITUTION: Polished and pregelatinized rice grains are made into KOJI (yeast) to initially give rice KOJI. Boiled or steamed soybeans and common salt are added to carry out fermentation and brewing to afford the aimed 'MISO'.
