Abstract:

PURPOSE: To efficiently reduce β-lactoglobulin content and obtain the subject fraction excellent in nutritive value and protein utilizing efficiency and useful as human milk substitute, etc., by heat-treating whey in a prescribed pH range and treating the whey with a specific ultrafilter membrane.
CONSTITUTION: Whey at pH 4.0-7.5 is heat-treated and then or simultaneously treated with an ultrafilter membrane having ≥50000 Da fractional molecular weight or a micro-filter membrane having 0.01-0.5μm pore size and a fraction having high α-lactoalbumin content is separated and recovered on the side of a permeating liquid to provide the objective fraction. Furthermore, the fraction is included to provide the objective human milk substitute or nutritious composition.
