Abstract:

PURPOSE: To produce an easily thawable frozen food by dissolving a specific hydrolyzate of starch in water, seawater or glazing liquid, applying the solution to a food to be frozen and freezing the food.

CONSTITUTION: A hydrolyzate having a DE of ≤30 and produced by the hydrolysis of starch is dissolved in water, seawater or glazing liquid at a concentration of 5wt%. The food to be frozen is coated with the solution and frozen. The individual foods can be separated from a frozen block by thawing the block quickly, and the necessary number of frozen foods can be obtained in a short time.
