Abstract:
PROBLEM TO BE SOLVED: To obtain a gas-containing dough suitable for doughs of cake, sponge, etc., by measuring specific gravity and pressure of the gas-containing dough which flows in a closed pipe, calculating specific gravity under the atmospheric pressure, adjusting gas content in the dough and stabilizing qualities such as feeling in eating, volume, etc.
SOLUTION: This gas-containing dough is obtained by measuring the specific gravity and pressure of a final dough sent out from a mixer under pressure in a closed pipe connected to the continuous mixer, calculating the specific gravity under the atmospheric pressure from the measured specific gravity value and pressure value and adjusting a gas content of the dough based on the calculated values. It is preferable to measure the specific gravity by using a densimeter and the gas content is adjusted by a fed amount of the gas to the continuous mixer.
