Abstract:
PROBLEM TO BE SOLVED: To produce granular natural cheese suitable for producing process cheese without forming block. SOLUTION: A solidified material is formed from milk by fermenting milk with a cultured lactic acid starter and producing fermented milk, then a milk solidifying enzyme is added to the fermented milk, thus cheese curd and whey are formed by cutting the solidified material and the whey is separated from the cheese curd under stirring the curd, then the resultant is preserved as individual granules without binding during storing by cooling the cheese curd.
