PURPOSE: To obtain a health vinegar drink having mitigated irritant smell and taste, low calorific value and high chemical stability, and drinkable easily, by adding a sweetener having durable sweetness to an aqueous solution of acetic acid containing organic acid, at a pH within a specific range.
CONSTITUTION: The objective health vinegar drink can be produced by mixing (A) ≤2pts.wt. of acetic acid with (B) >0.1pts.wt. (based on 1pt.wt. of acetic acid) of one or more organic acids selected from malic acid, citric acid, tartaric acid, lactic acid, succinic acid fumaric acid, and (C) a sweetener having durable sweetness and selected from licorice sweetener, thaumatin, extract of the fruit of Momordica grosvenori, and phyllodulcin at a pH of 2.7W3.3. Vinegar is known to be effective for the maintenance of health, and it has been proposed that the unagreeable taste and smell of vinegar is mitigated by the addition of sugars. However, the irritant smell and the acidulant taste of vinegar can hardly improved by this method, and furthermore, the method has problems of browing phenomenon and high calorific value. The above problems can be solved and a vinegar agreeable to take can be produced by adding the component B in the presence of the component C at a specific pH.
