Abstract:
PURPOSE:To obtain hyaluronic acid extracted from a crest of a fowl by digesting the crest with an enzyme without applying pretreatment to the crest. CONSTITUTION:A raw crest of a fowl is digested with protease while keeping the original shape of the crest and hyaluronic acid is separated from the digestion product and purified by conventional method.
