Abstract:
PROBLEM TO BE SOLVED: To produce a medicinal herb seasoning having improved preservability and optimal for human bodies by selecting dietary fibers suitable for both a seasoning liquid and a medicinal herb seasoning and subsequently adding the selected dietary fibers to the medicinal herb seasoning, because the dietary fibers are necessary for the seasoning liquid causing deterioration due to its transparency and for the healthy activity of the medicinal herb seasoning. SOLUTION: This method for producing a kneaded paste-like medicinal herb soy sauce or medicinal herb seasoning comprises compounding or mixing a soy sauce or a seasoning such as ponzu (a seasoning made of vinegar and the juice from a bitter orange) or noodle soup with the ground product, pulverized product, etc., of SEISYUTYU (a galenical), a multi-fibrous powdery food material, calcined calcium and its water-soluble fraction. The deformation of the soy sauce, the noodle soup, etc., into a kneaded or pasty product needs the inexpensive undissolved solid material in a dry amount of about 10%. When the inexpensive strong dietary fibers are looked for in a soy sauce mill, an unrefied soy sauce and further a galenical material required on health are pulverized and subsequently added in necessary amounts. The production of the seasoning similar to a paste, a kneaded product, etc., is finished.
