Abstract:
PURPOSE: To provide a process for producing a malt-preparation raw material having the optimum form without damaging the seed malt and to provide an apparatus for the process.
CONSTITUTION: A carbohydrate raw material and/or a vegetable protein raw material and a seed malt are charged into a kneading extruder to produce a malt-preparation raw material. The kneading and extrusion of the materials are carried out by successively performing the following steps (I) to (III). (I) A step of adding water to the carbohydrate raw material and/or the vegetable protein raw material. (II) A step of carrying out the gelatinization of the carbohydrate raw material and/or the primary degeneration of the vegetable protein raw material to convert the raw materials to a state susceptible to the action of Aspergillus. (III) A step of adding a seed malt to the raw materials subjected to gelatinization and/or primary degeneration and disperse the malt by mixing.
