Abstract:

To provide a method for producing a capsaicin analog without pungency and other N-vanillyl-fatty acid amides without using an acid chloride as a raw material.

A fatty acid or a fatty acid ester is mixed with an aqueous solution of vanillylamine in the presence of a lipase and reacted with the vanillylamine. A 12-22C fatty acid or its ester is especially used as the fatty acid or its ester to produce a capsaicin analog without pungency. An edible oil and fat is used as the fatty acid ester to produce the N-vanillyl-fatty acid amide from a part of the edible oil and fat. Thereby, an oil and fat containing the capsaicin analog without the pungency is obtained.
