PURPOSE: To provide a method for producing paste bread, capable of carrying out also mass production by packing a liquid edible material having high viscosity or extremely soft paste-like edible material in a baked bread by nozzle injection.
CONSTITUTION: A nozzle is inserted into a baked bread after baking from the outside by means using equipment and a paste edible material is injected into the baked bread by the nozzle and inner bread structure is pressed to the epidermic side to spread the interior of bread structure and the paste edible material is packed. The paste edible material is highly viscous liquid or paste capable of hanging or dropping by own weight and the material has often extremely soft property. Consequently, the production process includes a bread dough preparing and forming process (1), a fermentation process (2), a baking process (3), a paste edible material injecting process (4) and a product (5). Furthermore, the processes (1) to (3) are carried out according to ordinary method.
