PURPOSE: To obtain a powdery phospholipid having high purity in high yield by carrying out a base-interchange reaction with phospholipase D originated from microorganism of the genus Streptomyces and a crystallization process under respective specific conditions.
CONSTITUTION: The objective phospholipid powder can be produced by carrying out a base-interchange reaction using 1g of phosphatidylcholine, 5-100g of an organic solvent, 5-90 units of phospholipase D originated from microorganism of the genus Streptomyces, 5-100mol of an alcohol based on 1mol of the phosphatidylcholine and 0.1-2 pts.wt. of water based on 1 pt.wt. of the organic solvent solution of the phosphatidylcholine, adjusting the obtained organic solvent solution to a phospholipid concentration of 5-50wt.%, adding 1-10 pts.wt. of acetone based on 1 pt. wt. of the organic solvent solution, crystallizing the phospholipid from the mixture at 0-30°C dissolving 1 pt.wt. of the phospholipid crystal in 5-20 pts.wt. of a mixed solvent [a mixture of chloroform/methanol/ water at volume ratios of (65-100)/(0-30)/(0-5)], crystallizing the phospholipid with 0-10 times weight of acetone at 0-30°C and separating the crystal by filtration.
