PURPOSE: To obtain pickles simultaneously satisfying prevention of color fading and retention of aroma by admixing a pickle materials such as cucumber with a paste prepared by adding table salt to ground banana and by putting the resultant mixture to vacuum packaging followed by refrigeration.

CONSTITUTION: A paste prepared by adding table salt to ground banana is, if needed, incorporated with spice such as red pepper, followed by mixing pickle materials such as cucumber and 'nozawa-na' greens, and the resulting mixture is then put to vacuum packaging and refrigeration, thus obtaining the objective pickles.
