Abstract:
PURPOSE: To enable mass production of a plastically moldale fat which is useful for production of pies with excellent workability and has a columnar form by feeding a plastic fat adjusted at a specific low temperature to an extruder equipped with a rotary blade to form into chips.
CONSTITUTION: A plastic fat such as butter, margarine, shortening, lard or the like is cooled down to -40 to 0°C, preferably to -25 to -10°C, This fat is fed in an extruder provided with a rotary blade inscribing in the protruding output (preferably comprising a cylinder, a feeding screw, a rotary blade and a perforated plate) to form into chips of 3-30mm diameter and 5-100mm length.
