Abstract:
PURPOSE: To obtain a pulverized organic acid maintaining excellent flavor and taste and having adjustable acidity, by adding a specific amount of cyclodextrin and water to an organic acid and spray-drying the mixture.
CONSTITUTION: An edible organic acid such as food vinegar is added with 10W500wt% cyclodextrin and then with water at an amount to give a composition having a solid concentration of 25W35%. The mixed liquid is uniformly stirred with a homogenizer and the obtained liquid is spray-dried by conventional method to obtain uniform fine powder. The powder can be granulated with a granulator. The acidity of the product can be controlled by adjusting the amount of cyclodextrin added to the acid.
