Abstract:

PURPOSE: To obtain process cheese without using a chelatig agent at all, by blending natural cheese with cellulose.

CONSTITUTION: Natural cheese is blended with cellulose (e.g. cellulose of crystal range prepared as the rest by removing amorphous range of natural cellulose completely) in any ratio to give process cheese. The processed food is blended with a food such as ground meat of walleye pollack preserved with salt, etc., to give a novel cheese-containing food.
