Abstract:

PURPOSE: To obtain a sauce imparted with thick feeling and suppressed in quality deterioration such as viscosity drop and/or syneresis.

CONSTITUTION: This sauce stands incorporated with a partially heated and denatured whey protein. The whey protein is prepared by dissolving a virtually desalinated whey protein in water so as to be ≤15wt.% in protein concentration followed by heating at 55-120°C for 60min. The resultant solution may be evaporated to dryness.
