Abstract:

PROBLEM TO BE SOLVED: To provide a process for producing a seasoning containing tangle extract and/or a seasoning containing a fish and shellfish extract holding the flavor components of tangle and/or fish and shellfish from the viewpoint of quality and quantity.
SOLUTION: This process for the production of a seasoning containing tangle extract and/or fish and shellfish extract contains a process for the freeze- concentration of an extract obtained by extracting tangle and/or fish and shellfish with water or hot water. The extract may be subjected as necessary to conventional treatment, especially the addition of a sugar alcohol, etc., before the freeze-concentration treatment.
