PURPOSE: To stably produce a large amount of a sulfur-containing compound such as alliin at a low cost, by culturing callus originated from a tissue of garlic.
CONSTITUTION: A piece of garlic bulb is sterilized and a tissue piece is collected therefrom. The tissue is planted on Murashige & Skoog medium added with 0.001W100mgl of a synthetic or natural auxin (e.g. 2,4-dichlorophenoxyacetic acid) and cultured for 1W3 months to obtain a callus. The callus is planted on a Nitsh medium, etc., containing 5W100g/l of carbon source (e.g. sucrose), 1W1,000mg/l of inositol, 0.01W5mg/l of nicotinic acid, 0.01W1mg/l of thiamine hydrochloride, 0.01W1mg/l of pyridoxal hydrochloride and 0.01W10mg/l of glycine and grown by culturing at 10W35°C. The objective sulfur-containing compound such as alliin is separated from the cultured product.
