Abstract:
PURPOSE: To produce torularhodin by fermentation method having a formation ratio of torularhodin higher than a formation ratio of β-carotene.
CONSTITUTION: In production of torularhodin by culturing Rhodotorula glutinis and collecting formed torularhodin, the following methods (1) and (2) are conducted. (1) At least one selected from gluconic acid, glycerol, lactic acid and pyruvic acid is used as a carbon source. (2) The culture is carried out by aerobic culture under bubbling.
