PURPOSE: To obtain a β-palmitic acid-containing triglyceride having high absorbability, free from foul smell and useful as an additive for foods and drinks, etc., by increasing the content of β-site palmitic acid of a fatty acid triglyceride by a catalytic reaction and subjecting the product to ester interchange reaction using a lipase acting to α-site.
CONSTITUTION: A fatty acid triglyceride such as palm oil (having palmitic acid content of 43.3% and β-palmitic acid content of 18.7% in glyceride) is incorporated with a catalyst such as sodium methylate and subjected to chemical random-ester interchange reaction at 80°C for 20min to obtain a triglyceride having increased β-site (2-site) palmitic acid content (having palmitic acid content of 43.1% and β-palmitic acid content of 43.4%). The produced triglyceride is subjected to enzymologic ester interchange reaction with an arbitrary fatty acid using a lipase specifically acting to a-site (1,3-site) to introduce the fatty acid to the α-site (1,3-site) and obtain the objective triglyceride containing β-palmitic acid, having high absorbability, free from foul smell, exhibiting a melting point suitable for foods and drinks and giving a food or drink having high nutritive value.
