PURPOSE: To obtain vinegar of Angelica keiskei Koidz., having excellent aroma and mellowness without strength of vinegar and useful for keeping health, etc., by lightly drying roots of Angelica keiskei Koidz. in the sun, lacing the roots in a bottle, adding crystal sugar and brewed vinegar, hermetically sealing the bottle and aging the resultant blend for a specific period.
CONSTITUTION: Roots of Angelica keiskei Koidz. are washed with water, exposed to sunlight, lightly dried and placed in a bottle and crystal sugar and brewed vinegar are added to hermetically seal the bottle. Aging is carried out in this hermetically sealed state for about 2 years while opening and shaking the bottle about once every three months to afford the aimed vinegar of the Angelic keiskei Koidz.
