Abstract:
PURPOSE: To obtain water-soluble milkprotein having re-coagulate properties of aqueous solution by di- or tri-valent metal ion, by desalting of calcium in raw milk and drying.
CONSTITUTION: Keeping pH of raw milk or processed milk ≥6.0, calcium bonded with casein in milk is highly desalted by, for instance, electrodialysis. Next, resultant desalted milk is condensed by ultrafiltration, as desired, dried by freeze-drying or spray-drying, etc., or rennin is added to the resultant desalted milk, subjected to a rennet reaction and dried.
