Abstract:

PURPOSE: To provide a proteinaceous food product which contains concentrated phaffia coloring matter oil mainly comprising astaxanthin, has antiinflammatory and immunopotentiating action and is suitable used in marine kneaded food products having excellent color, light resistance, coloring properties and antioxidizing properties.

CONSTITUTION: This proteinaceous food product contains concentrated phaffia coloring matter oil mainly containing astaxanthin which is obtained from a phaffia yeast producing astaxanthin.
