Abstract:
To provide a novel pullulan derivative which exhibits excellent emulsification and protective colloid action thereby being useful as an emulsifying agent or a colloid stabilizer for a material of food products, cosmetics, pharmaceutical or industrial products; and a use thereof.
The pullulan derivative is characterized by having a cationic group and an anionic group respectively in the molecule, in which each group is charged cationically or anionically in an aqueous solvent. The use of the pullulan derivative as an emulsifier or a colloid stabilizer is also provided.
