Abstract:
To provide rare sugar-containing compositions with improved properties as a sweetener while maintaining excellent functionality of D-psicose.SOLUTION: Disclosed is a method for producing a rare sugar-containing composition using D-fructose as a raw material, the method comprising the first step of converting D-fructose to a mixture of D-fructose and D-psicose using a ketose 3-epimerase; and the second step of converting D-fructose to D-glucose using a D-xylose isomerase that does not act on D-psicose thereby obtaining a novel composition of interest comprising D-glucose, D-fructose and D-psicose. The product of the first step is a mixture of D-fructose and rare sugar D-psicose. This mixture is a sweetener having the same taste as sucrose has.SELECTED DRAWING: Figure 1
