Abstract:

PROBLEM TO BE SOLVED: To obtain a raw material powder, by which a soft-touch and fine porous rice confectionery improved in taste, feel to eat and flavor can be inexpensively produced by improving the pasting characteristics of starch, by adding an alkaline calcium agent to the raw material powder mainly composed of long grain or middle grain type cereal powder which is considered unsuitable for rice confectionery production, and to obtain a rice confectionery using the powder.
SOLUTION: For example, an amount of calcium hydroxide within the range from 0.05wt.% to 0.6wt.% (in terms of Ca) is added to the Indica type long grain powder as product to Thailand. Then, it is stirred and mixed while adding water in an amount of 50wt.% and, afterwards, the dough of rice confectionery is prepared in a steaming basket. This dough of rice confectionery is cooled and hardened until getting hard so as to be cuttable, and it is cut and formed in the size of longitudinal side × lateral side × thickness = 1.5×2.0×0.2cm. Further, it is dried so that moisture is about 20%, fried for 8 minutes within the range of oil temperature from 180°C to 200°C and the objective rice confectionery can be provided.
