Abstract:

PURPOSE: To obtain the title composition useful for foods and drinks, having moderately high viscosity, excellent heat resistance and productivity free from quality reduction by reacting a starch, etc., under a specific condition, forming a given amount of a mixture such as maltohexaose, etc., and reducing.

CONSTITUTION: In hydrolyzing a starch or a starch-based glucide with α-amylase of malt, the reaction is carried out under a condition at pH 4.5-6.5 at 40-70°C in the presence of pullulanase and isoamylase in amounts to give a total amount of a value of 100 times pullulanase active unit and isoamylase active units of ≥22.5 units based on 1 unit of α-amylase of malt to form 30-80wt.% mixture of maltohexaose and maltoheptaose, which is reduced in the presence of a catalyst such as Raney-nickel at 80-150°C under 10-250kg/cm2 hydrogen pressure to give the objective composition. The mixture contains preferably ≤40wt.% sugar-alcohol having ≥8 DP.
