Abstract:
PURPOSE: To obtain the casing which is easily peelable, transfers aroma, etc., to packed food and is adequate for production of ham, etc., by applying a peeling agent on the inside surface of tubular cellulose having a specific moisture content, then applying a tar-contg. smoke concentrate thereon. CONSTITUTION: Moisture is incorporated at 40 to 65% based on a dry weight into a tube of a fibrous cellulose system preferably having a diameter of 40 to 160mm and the inside surface thereof is coated with a peeling assistant of the ketene double bodies expressed by the formula (R1 , R2 are each 8-18C alkyl, etc.). The tube is then coated with the smoke concentrate contg. the tar derived from timber in such a manner that a casing absorption index attains >=0.4, by which the casing is obtd. The smoke concentrate derived from the timber is formed by burning timber, such as, for example, hickory, and capturing the tar in the water. The casing obtd. by settling the tar of the mass analysis distribution of the single mode smaller than 40 atomic mass unit into the wall of the casing by coating is used.
