Abstract:
PURPOSE: To provide a vegetable and animal fat free of cholesterol.
CONSTITUTION: The method is for removing sterol from, or respectively from vegetable and animal fat rich in sterols, which is characterized by including steps in which (a) the sterol-containing fat is mixed with a mixture of a hydrocarbon, a water miscible solvent and water, (b) the two phases forming are separated, and (c) the solvent is removed from the hydrocarbon-rich phase to obtain fat with reduced sterol, and/or (d) the solvent is removed from the hydrocarbon-exhausted phase at least until the sterol-rich fat precipitates and, if required, this fat is removed from the remaining solution.
