Abstract:

PROBLEM TO BE SOLVED: To provide a rice food having sticky moderate palate feeling (unsquelched and unsolid) preferred by Japanese, causing no break of rice grains and provided with glossy desirable appearances.
SOLUTION: The rice food contains 0.1-10 wt.%, based on raw rice, pectin having 30-75% esterification degree and one or more kinds selected from 0.1-10 wt.% sugar or sugar alcohol having 2-10 polymerization degree and 0.01-5 wt.% phosphatide having ≥1.0 weight ratio of nitrogen-noncontaining phospholipids to nitrogen-containing phospholipids.
