Abstract:

To provide a sake fermentation extract containing free amino acids and peptides and serving as a superior novel fermentation functional material having various physiological functions applicable to fields of food and beverage and medical products.

Sake cake is subjected to a starch degrading enzyme process and a proteolytic enzyme process. After fermentation using yeast is carried out, solid-liquid separation is carried out to obtain liquid components and obtain a powder product thereof.
