Abstract:

PURPOSE: To provide a new and flavorous seasoning for ASAZUKE and an ASAZUKE.

CONSTITUTION: One of these inventions is a seasoning for ASAZUKE containing an extract of an edible vegetable as the raw material, e.g. a seasoning for ASAZUKE containing a rice bran extract prepared by adding water or hot water to rice bran, extracting it and subsequently filtering the extract, a seasoning for ASAZUKE containing a malted rice extract prepared by adding water or hot water to malted rice, saccharifying or/and crushing it and subsequently filtering it, a seasoning for ASAZUKE containing a rice wine lees extract prepared by adding water or hot water to rice wine lees, extracting it and subsequently filtering it, a seasoning for ASAZUKE containing fruit juice, a seasoning for ASAZUKE containing vegetable juice or a seasoning for ASAZUKE containing a compound selected from an inorganic salt (except sodium chloride), an organic acid salt, a saccharide and alcohol as a dehydration and penetration agent. In a preferable form of the seasoning for ASAZUKE, a fermented material obtained by fermenting the above-mentioned extract in the presence of Lactobacillus or/and a yeast taking part in fermentation of pickles is contained. Another invention is pickles produced by using the above-mentioned seasoning for ASAZUKE.
