PURPOSE: To obtain a separated liquid dressing composition which is separated into liquid layers and can be emulsified only by shaking, by using an emulsion stabilizer containing microcrystalline cellulose and a gum having colloid-protecting activity.

CONSTITUTION: The objective separated liquid dressing composition is composed of a water-phase component containing an emulsion stabilizer, a seasoning spice, an acidulant and water, and an oil-phase component. In the above composition, ≥0.5wt%, preferably 1.0W5.0wt%, based on the whole composition, of microcrystalline cellulose and ≥0.01wt%, based on the whole composition, of a gum having colloid-protection activity, e.g. xanthan gum, tragacanth gum, etc. are used as the emulsion stabilizer.
