Abstract:
To solve the problem in which, while many techniques are disclosed about the viscosity reduction of a sesame composition, few findings are presented about increasing the viscosity, and to provide a novel sesame composition having properly high viscosity imparted thereto, and a method for imparting properly high viscosity to a sesame composition.SOLUTION: A sesame composition is blended with, as a thickening polysaccharide, at least one selected from xanthan gum, tamarind gum, carrageenan of 0.01%(w/v) or more, and modified starch of 1.0%(w/v) or more, so that the viscosity of the sesame composition when eaten can be controlled to 100-500 Pa s.SELECTED DRAWING: None
