Abstract:
PURPOSE: To obtain a sheet-like food using a fibrous soybean protein as a raw material and excellent in fibrous texture and chewing property.
CONSTITUTION: This sheet-like food is obtained by thermally fusing a fibrous soybean protein used as a raw material and having branched fringed soybean protein under pressure, preferably in a state containing 15-50% water content and forming the treated soybean protein into a sheet-like food. The sheet-like food has excellent chewing property, especially when used as a food of delicate flavor.
