To provide a method for producing a snack food holding the shape of barley or the like and having more improved oxidation resistance, and to provide the snack food produced by the production method.
The snack food comprises a malt which leaves the shapes of barley grains, is cooked and swollen to gelatinize starch in the malt, and is roasted with hot gas. In the snack food, the L value of the barley malt just after roasted with hot gas is 40-70. The method for producing the snack food comprises germinating barley grains having grain skins, drying the obtained barley malt, immersing the dried barley malt in water to absorb the water, removing the excessive water, cooking, and then roasting the products with hot gas.
