Abstract:

PURPOSE: To improve the workability of a seasoning and prevent the dripping in use, by solidifying a liquid seasoning such as sauce using an extract liquid of grass, tree and seaweed in combination with pectin, carrageenan, alginic acid and animal gelatin.

CONSTITUTION: A sauce, soy sauce, etc., are solidified with a liquid extract of grass or seaweed in combination with pectin, gelatin, etc., and the solidified seasoning is used in the preparation of hamburger, hot dog, carrying food, lunch, school lunch, etc. The staining of clothes with dripped sauce, soy sauce, etc., can be prevented and the seasoning used in each cooked food can be uniformized. The preparation process is simplified, the degradation of the sauce after cooking is mitigated and the deliciousness of the food can be maintained over a long period.
