Abstract:
To provide a starch-containing food quality improvement agent which is used for a starch-containing food and, even when the food is stored at low temperature, prevents sticking of individual noodles or rice grains to each other, that is, ensures a good loosening property, and provides a good appearance witt suppressed gloss from oils and fats.SOLUTION: The invention provides a starch-containing food quality improvement agent, which is an oil and fat composition including: 0.1 to 14.9 mass% of an oil and fat; and a total of 99.9 to 85.1 mass% of (A) polyglyceryl fatty acid ester with an HLB of 5 to 10, (B) polyglyceryl fatty acid ester with an HLB of 12 to 16, and (C) an organic acid monoglyceride-based emulsifier. This can provide a starch-containing food quality improvement agent which is used for a starch-containing food and, even when the food is stored at low temperature, ensures a good loosening property, and provides a good appearance with suppressed gloss from oils and fats.SELECTED DRAWING: None
