To obtain a starch quality-improving agent compatible with the kind of starch-containing food, namely enhancing starch-thickening effect or thickness-imparting effect and suppressing and/or promoting aging of starch.
The starch quality-improving agent comprises fenugreek gum with a molecular weight of ≥5.0×105 g/mol so as to suppress the short-period aging of the starch. Alternatively, the starch quality-improving agent comprises fenugreek gum with a molecular weight of ≥15.0×105 g/mol so as to synergistically raise the viscosity of starch paste and suppress the long-period aging of the starch. Further alternatively, the starch quality-improving agent comprises fenugreek gum with a molecular weight of ≤15.0×104 g/mol so as to promote the long-period aging of the starch.
