Abstract:
PURPOSE: To sterilize a natural cheese without separating the fats or changing the flavor and physical properties by treating the natural cheese under a high pressure without heating.
CONSTITUTION: Natural cheese is packed in a synthetic resin film and put in a pressure medium in cylinder of a high-pressure treating machine. Then pressure is increased to ≥4000atm at a temperature of from -10°C to +20°C and held at the pressure for ≥5min followed by the reduction.
